Your Neighborhood Restaurant

Chloe, an American Bistro in Downtown Minneapolis, was created by the multi-talented team of Restore Restaurant Holdings, which also owns and operates EaTo.

Located at 700 S. 3rd Street, inside the historic Canopy by Hilton Minneapolis Mill District hotel, the restaurant is known for its warm hospitality and classic fare from elevated apps to burgers, fish and steak frites. Open for both weekday lunches (Tues.-Fri.), happy hour and dinner.

Restore Restaurant Holdings is pioneering a new way of running a restaurant company by collaborating with successful restaurateurs to rebuild the hospitality business in downtown Minneapolis and surrounding areas. RRH is headed by co-founders, Dennis Monroe and his son, Matthew Monroe. Also joining the company are sons Alex and JJ Monroe, who each bring their own talents to the hospitality-focused company.

Dennis Monroe

Dennis is a nationally renowned business attorney with Monroe Moxness Berg and law professor at St. Thomas University School of Law in Minneapolis. He specializes in mergers, acquisitions and finding creative business and financial solutions for restaurants and franchises. He was bit by the restaurant bug while serving as CEO of Parasole Restaurants (2009-2011), a successful multi-concept company in Minneapolis, and has gone on to create a restaurant company with his wife and three sons.

Matt Monroe

CEO & Owner
Matt Monroe has a business/finance background, including managing investments for a family office for several years in NYC. He has studied wine and had a short stint with a Danny Meyer’s restaurant in NYC, learning the legendary restauranteur’s highly touted serving style. Matt is charged with the financial well-being of both Chloe by Vincent and its sister concept, EaTo, along with the company’s future growth plans.

Jeremy D Baron

Executive Chef
Jeremy D Baron is Chloe's executive chef. Before joining us, Jeremy's experience included leadership roles in the kitchens at The Lexington, Red Rabbit and Prima. He has a wide range of culinary styles, which will be evident in Chloe's new expanded menu of classics with an elevated comfort twist.
